Cherry Tomato Confit

Cherry tomatoes, garlic, shallots and fresh herbs all slow cooked in olive oil. All of the ingredients mixed together really makes this keto appetizer perfect on almost any meal.
The plus side is that it is a great fat source to add to your meals and tastes amazing!
How to make Cherry Tomato Confit?
Confit is a French style of cooking ingredients slowly in their own fat. You can also do it just by slow cooking ingredients in a fat source to preserve them.
It only takes FIVE MINUTES to make this low carb recipe. All you need to do is add the cherry tomatoes, garlic, shallots into a dish and fill it up with oil. Add some fresh herbs like thyme and basil on top then season and put in the oven.
You can either cut the top off of a garlic bulb and place it in the oil or you can use garlic cloves.
- Preheat the oven to 375 degrees F.
- If you are using garlic bulbs, cut the tops off of the bulbs. I personally like unpeeled garlic cloves if I am using just the cloves.
- Add the cherry tomatoes, garlic bulbs with cut side on top or the garlic cloves, shallots (or onions), and the oil to a baking dish.
- Add the sea salt on top of the dish as well as the fresh herbs. Place the herbs evenly over the dish.
- Bake for 45 minutes.
- Let cool for about 10 minutes then you can pour it into a jar and store in the fridge.
How to store confit
You can store the confit in a jar in the refrigerator. Since the ingredients are in oil, the oil won’t harden. I’m sure you can store the confit in a sealed container as well. I like to use a glass jar to lock the freshness in.
You can also freeze the confit to keep it fresh longer. If you put it in the fridge it will stay fresh for about two weeks. If you keep it in the freezer it will stay fresh for about a month.
