Instant Pot meals are my favorite kind of meals! When you can just throw everything into the pot, set it and forget it is the best way to make dinner or meal prep. This easy to make keto Instant Pot Pot Roast recipe is delicious and full of healthy ingredients. The bone broth is so healing for the body and something you should have in your daily diet. There are so many delicious nutrients in this meal from the meat to the broth to the seasonings. I love to make this meal for any time of year as well.

This low carb Instant Pot Pot Roast is a perfect recipe to make during a 10 day real food detox as well! How to Make Instant Pot Pot Roast?

I will walk you through the steps on how to make this recipe here. It is so easy and you are going to love this recipe! You can see the full ingredients and instructions in the recipe card at the bottom of this post.

  • Clean and peel the carrots, then dice them into smaller chunks. Dice up the onion as well.
  • Peel the chayote, slice in half then slice in quarters. Remove the core from each slice then dice them into smaller chunks.
  • If you are using fresh thyme and rosemary then remove the leaves from the stems and give them a little chop to make them small. If using dry herbs please see notes.
  • Add everything into the Instant pot. Set it to Manual on high pressure for about 120 minutes.
  • Once done let it self-release for about 10 minutes then release it. Using forks break up the meat into chunks and slightly shredded.
  • Serve into a bowl and you can top it with some feta cheese and parsley (optional). Enjoy!

Easy to make keto Instant Pot Pot Roast recipe. This low carb instant pot recipe is perfect for meal prepping or a keto dinner recipe.

Ingredients

  • 2 lbs Beef Roast
  • 8 oz Bone Broth
  • 2 cups Water
  • 2 stalks Carrots
  • 1 Chayote Squash
  • 1 medium Onion
  • 1 tsp Rosemary, fresh
  • 1 tsp Thyme, fresh
  • 1 tsp Ginger, fresh
  • 1 tsp Sea Salt
  • 1 tsp Cumin Powder

Instructions

Notes

If you are using dried herbs I would suggest using two teaspoons instead of one teaspoon.
