This Egg Roll in a Bowl is the perfect clean eating meal! Here is a delicious lunch idea, that is also perfect for meal prepping! When I start focusing on what my meals look like everyday and start tracking my macros, meal prepping is the EASIEST way to succeed your goals. Meal prepping helps me, but of course it may not be your thing and that is okay, this is still a great lunch or dinner idea. What makes this Egg Roll in a Bowl so amazing is that there are so many different things you can do with it. You can add in any flavors, like seasonings or sauces you want. This recipe is perfect for family dinner or of course meal prepping for the week. Since starting the keto diet life style this meal has been my go to all the time!

Ingredients

  • 200 g Coleslaw Mix
  • 1 lbs 80/20 Ground Beef
  • 1 tbs Organic Coconut Aminos Seasoning Sauce, we get Trader's Joe
  • 1 tbs Onion Green Whole
  • 1 tsp Pink Salt
  • 1 tsp Garlic Powder

Instructions

  1. Cook the ground beef in a frying pan until almost done.
  2. Add in all the rest of the ingredients and cook until the coleslaw mix is wilted. 
  3. Serve or store in glass containers. Let cool before storing in the fridge. Store up to a week.
