Avocado Brownies

Avocado brownies? Sounds kind of weird right? It’s actually super delicious! These brownies taste like chocolate heaven with a hint of avocado. I love brownies and have been wanting to try it out with avocados! Chocolate and avocados go great together. If you’re craving some delicious low carbohydrate brownies you have got to make these. When we’re craving something sweet and soft, these are what we go to!

This recipe is low carb and delicious. You can make theses for your dinner party and serve to your guests. My son absolutely loves them! Much better than filling his face with a bunch of sugar. These are soft, moist and full of chocolate flavor. To make this recipe even more great, I like to add about half a cup of Lilly’s Chocolate chips to the batch. You will have some super chocolate fat filled brownies that taste fantastic!

Attention Chocolate Lovers!

How great is it that we can enjoy something chocolaty on this diet? Chocolate has so many benefits and is pretty low carb. 100% cocoa can be bitter but is easily sweetened with some stevia or erythritol. A nice tall glass of iced almond milk is the perfect side to go with your brownies. Other great options are coconut milk, cashew milk or flax milk. This recipe is dairy and nut free and if you use Enjoy Life Chocolate Chips they are allergy free. While being in this space I’ve learned allergens are everywhere, and I know it can be hard to find recipes that are allergy free. My sisters one-year-old is allergic to the world. Since she is breast feeding I try to make recipes that she can eat so he doesn’t have a reaction. I have found it very challenging to make these recipes, but I have learned some things. The main ingredient I have a heard time leaving out is eggs! Do you have an egg allergy? Let me know what you use to substitute it in the comments.

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Melt the coconut oil and add to a mixing bowl
  3. Mash the avocado and add to the coconut oil
  4. add in the eggs, vanilla and mix together
  5. add the rest of the ingredients together, then slowly add the dry ingredients to the wet ingredients.
  6. once mixed together add to a brownie pan. I usually line mine with parchment paper.
  7. bake for about 30 minutes. Let cool and cut into 9 pieces
  8. Enjoy!
