With the start of a new year I am thinking of my health and what I am putting in my body. This is a clean and delicious low carb Shrimp Scampi recipe is so easy to make! This keto recipe is full of flavor with the zest of lemon and tasty shrimp!

How to make Shrimp Scampi?

This recipe is super easy to make and only calls for a few ingredients. The three main ingredients are shrimp, zucchini noodles and lemons. I walk you through step by step and you have some pictures to show you the process. You can find the full ingredients list and instructions in the recipe card at the bottom of the post.

  • Heat your skillet to medium/high.
  • If you are making your own zoodles then spiral you zucchini and pat dry with paper towels. You can also put them in a cheese cloth and ring out all of the water. Try to get them as dry as you can.
  • Add in the oil to the skillet and then add in the zoodles and garlic. Cook for about 10 minutes or until they start to get soft.
  • Rinse and chop up your fresh parsley.
  • Add in the butter, shrimp, lemon juice, cooking wine and seasonings to the skillet. Cook for about 15 minutes or until the shrimp are pink. Make sure to still it all together periodically.
  • Add in the parsley a few minutes before it is done and stir in well.
  • Serve on a plate, add some of the drippings from the pan on top and enjoy!
