It is so easy to find red chile as well, if you’re not from New Mexico then it might be harder to find. You can order it online or look in your local grocery store in the freezer section.

How to make Red Chile Ribs?

A super easy to make low carb ribs recipe. There are only a few steps to make this recipe. All you need is to marinate them then grill them up! Follow the steps below and see how easy it is to make. The full ingredients list and instructions are in the recipe card at the bottom of the post.

  • Cut your rack of ribs in half and put them in a gallon zip lock bag.
  • Pour your red chile into the bag, along with the salt and garlic and seal it, then place in the fridge and let it marinate for about 8 hours or over night.
  • Light your grill and get it hot.
  • Remove your racks of ribs and place on the grill and close the lid. Don’t throw away the bag of chile.
  • Sear the ribs for 10 minutes on each side (top and bottom). Remove from the grill.
  • Place each rack of ribs on foil (separate) big enough to cover the ribs fully. Pour the red chile from the bag on top of the ribs and close up the foil (it should wrap up the ribs all the way around so the chile doesn’t leak out).
  • Put back on the grill and close the lid and cook for about 20 to 30 minutes. Don’t let them burn but they will get a little black on the edges.
  • Remove from the grill and they will fall apart! Cut into 4 servings and enjoy!

Just as easy as one, two! This easy to make spicy and sweet meal will make the whole family happy. If you don’t have a grill then no problem. You can certainly make this recipe in the oven. All you need to do is marinate them as the directions say then wrap them in foil with the red chile on a sheet pan and put in the oven at 275 degrees F. for about 3-4 hours.
