Low Carb Casserole Dish

I grew up eating the boxed tuna casserole meals. I loved them growing up, but of course they were unhealthy and full of carbs. It was actually easy to make this traditional meal low carb.

How I made it low carbs is by swapping out the noodles with cauliflower. The cauliflower is soft and the texture is similar to a noodle. Personally the noodles are not my favorite part of tuna casserole anyway.

The crunchy topping is made with pork rinds instead of bread crumbs. Pork rinds mixed with cheese and butter creates a delicious taste and crunch to the meal.

What is the best tuna brand?

In our house, our favorite brand is Wild Planet Food. This post is not sponsored we just love this brand. You can really taste the difference in the tuna.

My son refuses to eat any other brand and only likes wild planet tuna. I have tried to have him eat other brands and he says he doesn’t like it and where is the good tuna.

We always buy our tuna (Wild Planet Food) from Costco. You can get it in any grocery store but Costco has a large pack and is less expensive then other stores. You can also get this tuna on Amazon. Link is an affiliate link.
