These cookies are mainly nut flour based and are low carb. They are baked and rolled in powdered erythritol. Some might say the erythritol taste is too strong at first, but once you are use to the taste of erythritol then you won’t even notice it.

Instructions

  1. Preheat the oven to 325 degrees F. and line your cookie sheet with parchment paper or a silicon mat.
  2. Add your pecans into a blender and crush them until they are fine.
  3. Combine the dry ingredients into a mixing bowl: Pecans, coconut flour, almond flour, pink salt, and erythritol.
  4. Mix the dry ingredients together well and set aside.
  5. In a separate mixing bowl combine the wet ingredients: melted butter, egg, vanilla extract and liquid stevia.
  6. Mix the wet ingredients well and combine with the dry ingredients. Mix together until well combined.
  7. Take a cookie scoop and roll a scoop of dough into a ball with your hands and set on the cookie sheet. Continue until all of the dough is rolled into balls and place on the mat evenly.
  8. Bake for about 25 minutes. Once done let cool for 10 minutes.
  9. Place the topping erythritol on a plate and roll each bowl in it until well covered. Enjoy!
