Mug cakes are the perfect go to when it comes to wanting something sweet but not a lot of work. This recipe is a delicious Coffee Mug Cake with hints of coffee and cinnamon. I have been wanting to make a mug cake for awhile now I just never got around to it. I finally started playing around with some ingredients and decided to make a coffee mug cake. Oh my it came out great! I’m sure you know by now I am obsessed with coffee and probably drink too much of it often but this brings me back to the days I use to eat muffins and drink coffee in the mornings for breakfast. But I don’t have to feel guilty about this breakfast and not worry about that sugar crash later on. This recipe has TONS of fat which will help you keep going for the day.

  1. Add your butter to the mug you are going to use. Then melt in the microwave.
  2. Add the coffee, heavy cream, egg, coffee extract, and stevia into the mug then whisk together with a fork.
  3. Add the rest of the ingredients, then whisk together again until smooth.
  4. Place the mug into the microwave and cook for about 90 minutes.
