How to Make Curry Chicken?

I will walk you through the steps on how to make this recipe here. It is so easy and you are going to love this recipe! You can see the full ingredients and instructions in the recipe card at the bottom of this post.

  • Chop your chicken into chunks and add to your skillet with the olive oil.
  • Cook on medium/high for about 15-20 minutes or until the chicken is fully cooked. Set aside to let cool.
  • Prepping your ginger: peel skin off and mince with a microplane. Finely mince your scallions.
  • In a mixing bowl add your mayonnaise, lime juice, fresh ginger, curry powder, sea salt, and scallions.
  • Mix together well until it’s a creamy sauce. Add your sauce to the chicken and mix together until all of the chicken is covered.
  • Serve your chicken onto plates or bowls then add the pine nuts on top of the chicken evenly for each serving.
  • Remove the cilantro leaves from the stems and give then a slight chop then sprinkle on top of the dishes as well. Enjoy!

Tips: Make sure the skillet is off when adding the sauce to the chicken or else the mayo will separate. You can serve on butter lettuce and turn it into a taco.
