- Add your heavy cream to a mixing bowl and mix with a hand mixer until it turns from liquid to thick and fluffy.
- Add to the same bowl, coconut oil, peppermint oil (or extract) and sweetener then mix until well blended.
- Or you can put all of the ingredients into a food processor and blend until a paste.
- Evenly scoop the mix into a mold of your choice and place in the freezer for about 60 minutes.
- Once the Peppermint Patties are almost done in the freezer, add your chocolate and coconut oil to a double boiler on a medium to high heat. Stir it frequently so it doesn’t burn.
- Remove from the heat and let coo for a couple of minutes. Then remove the Patties from the mold and put parchment paper or a silicon mat on a cookie sheet.
- Place one of the peppermint patties in the chocolate and fully cover it. I like to use a fork, lightly tap the fork with the fat bomb on top to remove extra chocolate.
- Place on to the cookie sheet and repeat until all of them are covered.
- Place the cookie sheet in the freezer and let them harden up for about 15 minutes.
- Store in a freezer bag in the freezer. Enjoy!
