Pumpkin Cookies

A delicious and easy to make fall recipe. These keto Pumpkin Cookies are the perfect fall dessert! They are so soft and and full of pumpkin spice flavor you will want to eat them all!

There are just a few ingredients and few simple steps. You are going to want to make these low carb cookies this fall! Everyone is going to love them and ask for them all the time.

How to make Pumpkin Cookies?

It is so easy to make these keto cookies! just follow these few steps and soon you will have super tasty cookies. This recipe is like fall in your mouth! The full list of ingredients and instructions are in the recipe card at the bottom of this post.

  • Preheat the over to 350 degrees F. Line a cookie sheet with parchment paper and set aside.
  • In a mixing bowl add the softened butter, pumpkin purée, 1 egg, and vanilla extract and mix well.
  • In a separate mixing bowl add the almond flour, erythritol, baking powder, salt, and pumpkin spice and whisk together well.
  • Combine together and mix well with your hand mixer.
  • In a separate bowl separate your egg whites from the yolks and you can do whatever you want with the yolks we don’t need them for this recipe.
  • Using your hand mixer mix the egg whites on high until stiff peaks.
  • Fold the egg whites into the batter and until well mixed.
  • Using a cookie scoop evenly place them on your cookie sheet and bake for about 18-20 minutes. Recipe makes about 20 cookies.
  • Let cool for about 10 minutes then enjoy!
