Salad is the perfect way to get in healthy fats. In this recipe you will get your fats from the avocado! You can also add some olive oil on top to add some more healthy fats.

How to make Tomato Cucumber Salad?

This recipe is so easy to make! You literally just chop some veggies and toss them together. Follow these super simple steps to make this amazing salad. The full list of ingredients and instructions are in the recipe card at the bottom of this post.

  • Cut the ends of the cucumber off and slice thin to thick slices down the cucumber and put in a salad bowl.
  • Chop the cherry tomatoes in half and put in the salad bowl.
  • Slice the avocado in half and remove the seed. Remove the skin and dice the avocado into pieces and put into the bowl.
  • Dice the mozzarella into chunks and put in the bowl.
  • Mix up the salad and add in the lemon juice and the salt then toss the salad again.
  • Add the basil on top then serve!

Super easy to make keto Tomato Cucumber Salad recipe. Made with healthy fats, fresh veggies and herbs with creamy mozzarella and avocado!

Ingredients

  • 10 oz (300g) Cucumber
  • 8 oz (230g) Cherry Tomatoes 
  • 3.5 oz (105g) Avocados
  • 8 oz Mozzarellas 
  • handful of fresh Basil
  • 1 oz Lemon Juice
  • 1 tsp Sea Salt

Instructions
