How to make lemon bars?

It is so simple to make this dessert! Make sure you are using real lemons for this recipe. You are going to want fresh lemon juice rather than a bottle or something. Follow these easy and simple steps below to make this delicious summer dessert! The full ingredient list and steps are in the recipe card at the bottom of the post!

  • Preheat the oven to 350 degrees F. Line a 9in baking pan with parchment paper and set aside.
  • First we will start with the crust. Melt the butter and mix it in with the almond flour, erythritol and salt.
  • Once it is combined well put it into the pan and press evenly with fingers. Place in the oven and bake for 8 minutes.
  • Now we will make the filling. Add the eggs into a mixing bowl and whisk together until well combined.
  • Zest the lemons into the eggs, make sure to only zest the the yellow and not the white part of the lemon as it is very sour. Squeeze the lemons into the mix as well.
  • Add in the almond flour and erythritol and mix together well. Add in the xantham gum and mix well.
  • Pour the filling on top of the crust and place back in the oven for another 15 minutes. The middle of the Lemon Bars should not giggle and the sides will be firm.
  • Place in the fridge for about 2 hours. Once it is done you can slice the bars make sure to clean the knife with water after each cut. Serve and enjoy! Keep refrigerated.

To make this dairy free substitute the butter with coconut oil!
