Cashew Chicken
I tried Cashew Chicken for the first time the other day, and I knew I had to make a recipe for it. It is definitely a great comfort food recipe. Just a few simple steps and dinner is ready for the whole family.
Easy Cashew Chicken Dinner
There are just a few easy steps for this recipe. I used a cast iron skillet to make this delicious chicken. When it comes to cooking dinner I love using my cast iron skillet. Cast iron cooks everything so well and easy to make in it. Lets start with the chicken, you will want to put some oil in the pan and put your cut up chicken in the skillet. Once you have the chicken cooking make sure to cook it until its cooked all the way.
Now on to the delicious sauce! The sauce in this recipe is really the star of the show. I like to add all of the ingredients together and mix it up well. When the sauce is mixed up you will want to add it to the cooked chicken while still on the stove. Keep cooking until everything is nice and hot.

You know I am a huge fan of meal prepping. This is another great meal to make for your meals throughout the week. Cauliflower rice is the perfect side to go with this low carb cashew chicken recipe. I honestly love to make cauliflower rice with most of my dinners. Here is how I usually make my cauliflower rice: I usually use frozen cauliflower rice, it is much easier to use. I get my skillet hot and add in the cauliflower then cook it until it starts to brown then I add in about a tablespoon of butter, pink Himalayan salt and garlic powder. I promise this is how you will want to cook your cauliflower rice every time.
Add some fancy chop sticks to your plated cashew chicken and cauliflower rice and serve it up to the family. I love to cook warm and delicious meals for my family. Family dinners are where the memories are made and my personal recommendation is to always make time to sit down at the end of the day and eat a meal together. You will thank yourself in the future.

Ingredients
- 1 1/2 lbs Chicken Breasts
- 1 tbs Avocado Oil
- 1/2 cup (3.5 oz) Halved Cashews
- 1/4 cup (2.5 oz) Coconut Aminos
- 2 tsp Fresh Ginger
- 1 Garlic Clove (or 1 tsp Garlic Powder)
- 1 tsp Red Peppers
- 1 tbs White Wine Vinegar
- 1 tbs Avocado Oil
- 2 tbs Sugar Free Ketchup
- 20 drops Liquid Stevia
- 2 tbs Bone Broth (or water)
- 1/4 tsp Xantham Gum
Instructions
- Soak the cashews over night or for at least 6 hours.
- Put your skillet on med/high and add 1 tbs avocado oil and the chicken in the skillet.
- Cook until the chicken is cooked all the way through.
- In a mixing bowl add the rest of the ingredients including the cashews and mix well.
- Add the sauce to the chicken in the skillet and cook until everything is hot.
- Optional side: Cook cauliflower rice and plate it on the side.
- Optional Garnish: Green onions, sesame seeds, hemp hearts.
