Coconut Cream Strawberry Crepes | dairy free

Strawberry coconut cream filled crepes are heavenly. The best part about this super simple recipe is that you can throw all of the crepe ingredients into a blender and just pour it right into the skillet! Perfect to get in some high fat and protein in the morning without it taking you all morning to make.

My favorite foods for breakfast have always been pancakes, french toast, and crepes. I am a huge sweets fan and these keto friendly crepes have definitely hit the spot for me. The strawberry coconut cream is so sweet and tasty and the best part is that there is no added sweetener its all natural sugars from the coconut and the strawberries.

Try making this recipe for breakfast the next time the family wants to go eat at iHop or Village Inn and I promise they will absolutely love them. The family will get that sweet craving while filling their bellies with healthy fats and protein. I used the Quest Nutrition Salted Caramel protein powder for these but this recipe can be made with any flavor you choose. Also just a unflavored will work I just recommend adding more stevia so they still have that sweet taste.

Ingredients
  

Crepes

  • 1 scoop Protein Powder
  • 1/2 cup Unsweetened Milk
  • 4 large Eggs
  • 2 oz Cream Cheese
  • 10 drops Liquid Stevia

Filing

  • 1 can Coconut Milk (thai kitchen)
  • 150 g Strawberries

Instructions
 

  • Put all of the crepes ingredients into the blender. Mix well.
    Set aside and work on the filling.
    Make sure the can of coconut milk has been in the fridge over night.
    Take a spoon and remove the solid cream out and place in mixing bowl.
    In a separate bowl place the strawberries and smash with a fork.
    Add the strawberries to the coconut milk cream and mix will until fluffy or well mixed.
    Heat your skillet to medium/low.
    Pour about 1/4 cup of crepes mix in. Place a lid to help steam the top. Cook for a few minutes.
    Once the edges start to brown flip and let cook for about a minute then remove.
    Once you cooked all of the crepes fill with the filling.
    Add on top some extra cut up strawberries and more cream or whipping cream. Enjoy!
