Blueberry Coconut Popsicles | dairy free
Blueberry Coconut Popsicle’s are a great way for you and you’re family to cool down this summer! The ingredients are so simple and delicious. These Popsicle’s are full of fats, sweet and creamy. They have blueberries packed inside which gives them nice frozen chunks to bite into. You can always make this recipe with any berry you would like and I am sure they would go perfect with this recipe as well.
These Popsicle’s sure were a hit with the little one! If you have little ones and are wanting to give them something for the summer these are perfect and you don’t have to worry about all the sugar that comes in regular Popsicle’s, I know that I grew up loving all of the Popsicle especially the fruity ones, and these definitely hit the spot.
Blueberry Popsicles

Ingredients
- 1 can Unsweetened Coconut Milk
- 60 g Blueberries
- 20 drops Liquid Stevia
- 1/2 tsp Vanilla Extract
Instructions
- I used a whole can of coconut milk but you can also place the can in the fridge over night and just use the creamy fat that goes to the top you may just need to add about a cup of nut milk.
- Put all of the ingredients into a bowl (just leave some of the blue berries out) and mix together with a whisk or hand mixer mix it up.
- Add some of the leftover blueberries into the popsicle molds and then pour the mixture into the molds evenly.
- Place in the freezer for about an hour or until frozen.
