Quick easy recipe that everyone will enjoy! Fajitas are always a delicious quick dinner, that is one of my go-tos. The best part of fajitas is that you can use either steak or chicken, both go perfect with bell peppers, sour cream and cheese. Another thing to think about adding to this dish would be some low carb tortillas.
Fajitas certainly have beautiful colors! I usually use prepackaged meats that we get at Sams Club, because their super quick. You can always cook up a steak, some chicken breasts or chicken thigh. We like to make our bell peppers soft with a tiny bit of crunch, but it is all about preference and you can make this recipe however you would like.
- 2 whole Bell Peppers
- 2 tbs Olive Oil
- 8 oz Steak
- Cut the stems out of the bell peppers and cut from top to bottom.Place bell peppers in skillet with the olive oil and cook until they start getting soft.Add in the meat and cook for about 20 minutes. (if using a raw steak cut the steak up into strips and start cooking it first for about 10 minutes then add in the bell pepper.Cook everything together until peppers are soft and meat is fully cooked. Add in any seasonings you want.Place a serving on a plate and top with sour cream and cheese. You can also warm up your favorite low carb tortilla.
